Day 19

Yummy!

Eat.

My favorite meal this week was Gnocchi Soup!

This is a super easy way to make a huge pot of soup, eat some, refrigerate some, freeze some for a snowy day… yes, the snow is coming soon.. and ultimately add some variety and health to your diet!

Ingredients:

8 cups of Half and Half

1 cup of tiny diced carrots (boiled)

1 cup of tiny diced celery

1 box of premade mini gnocchi (boiled)

1 cup of chicken broth (I prefer 1 Tbsp. of better than bullion chicken stock in water)

1/2 onion diced

2 Tbsp. diced garlic (I keep a jar of predicted garlic from the grocery store in the fridge)

4 Tbsp. butter

1 Tbsp. oil

2 Tbsp. flour

Method:

Add butter, oil, onion, and garlic in a medium sauce pan until the butter is melted.

Add in celery until it is soft

Add flour and cook mixture for 1 minute

Add carrots and mix it all into a paste.

Slowly add in half and half until keeping the mixture smooth as you add that.

Add in chicken broth and keep stirring.

Finally add in the cooked gnocchi and stir.

Continue cooking until mixture thickens (about 15 minutes) while stirring continuously.

Serve and enjoy!

*You can add cooked, shredded chicken if desired or spinach in the last 2 minutes of cooking.
