This last week I had a friend over for dinner and decided to try something a little fancier than the average spaghetti or mac and cheese! 😉
I had fresh caught, frozen salmon in the freezer, so I looked up some recipes online. None of them looked really simple or if they were simple, I didn’t have the ingredients at home. That made me combine a couple and make this recipe.
I learned through this that I really don’t like the taste of salmon, and neither does she!
However, I hope you all enjoy it!
1 fillet of salmon
3 small red potatoes (or any you have on hand), cut into about 3 mm. chick pieces.
Place the salmon in the center of a glass pan and surround it with the potatoes.
Drizzle olive oil over all of it and then salt and pepper to taste.
Take one lime and slice it into 4 wedges. Squeeze that juice over the salmon and potatoes. Take the final lime and slice it thinly. Place those slices directly over the salmon.
Bake at 425 degrees F for 14-16 minutes. Remove the salmon and continue cooking potatoes for another 6-8 minutes or until the potatoes are done.
