Day 47 – Parmesan Chicken Recipe

Eat.

I am so thankful for Italian food! Literally all of it!

I like gnocchi, tortellini, spaghetti, pasta of all types, pretty much anything that you could get at a street side, home-style place in Italy!

All that to say, I just googled this and according to Google, this is not actually Italian, which is kind of sad!

Anyway! In my mind this is still Italian and I’m making it tonight, so here is the recipe!

Ingredients:

2 pieces of chicken (sliced into strips)

1/2 cup flour (gluten free baking flour also works here!)

1/2 cup parmesan cheese (powdered)

1 egg

oil

butter

fresh parmesan (for topping)

 

Method:

Mix flour and dried cheese in a bowl, set aside.

Whisk egg in another bowl.

Melt oil and butter together in a pan and heat it up.

Take chicken strips and individually dip the chicken into egg and then flour/cheese mixture and then place into hot pan. Repeat for all chicken pieces and fry until lightly golden.

Place all pieces into a glass or other oven safe pan and then bake at 350F/180C for 15 minutes.

Serve over pasta and spaghetti sauce. Top with fresh parmesan and enjoy!!

So there you go! My favorite Italian, non-Italian meal!
