Day 144 – Salad 3 Ways

Salads have become a new favorite of mine. Not only are they healthy, they’re also really simple to make and inexpensive! Here are my three favorite lately…

  1. Mexican Chicken Salad

Chicken:
Slow cook 1 onion, 2 tablespoons garlic, 3 tablespoons cumin, 1/4 cup taco seasoning, 1/2 lemon, and 6 chicken thighs (diced, boneless and skinless) in a pan until cooked.

Fill a bowl with your favorite mixture of leaves (my favorite right now is called “spring mix”),  add on the chicken, and top it off with some shredded cheese!

*If you like salad dressing, add some of the sauce from the cooked chicken to yoghurt and pour it on!*

2. Italian Chicken Salad

Chicken:
Take 4 chicken breasts and smash them flat. Put them in a slow cooker with one bottle of Italian salad dressing. Cook until done and then dice.

Take a bowl of spinach and kale, top it off with the diced chicken, shredded carrots, sliced onions, and some of the sauce from the cooked chicken. I like cheese on this one too!

3. I call this one, “I’m late and need to pack a lunch!”

Take whatever leftover lettuce is in the fridge, add in whatever leftover veggies (cooked or raw) and meats are in the fridge, top it off with some chopped nuts and shredded cheese, add some balsamic vinaigrette dressing and it’s good to go!
